  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (120g) creamy peanut butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium saucepan over low heat, melt the butter. Remove from heat and stir in the granulated sugar until combined.
  3. Whisk in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix the brownie batter.
  6. Pour half of the brownie batter into the prepared pan and spread evenly.
  7. In a small bowl, slightly warm the creamy peanut butter if it is very stiff, making it easier to dollop.
  8. Drop spoonfuls of the peanut butter mixture over the batter in the pan.
  9. Pour the remaining brownie batter over the peanut butter layer.
  10. Use a knife or a skewer to gently swirl the peanut butter into the chocolate batter to create a marbled effect. Do not over-swirl; you want distinct ribbons.
  11. Bake for 25 to 30 minutes. A toothpick inserted near the edge should come out with moist crumbs, not wet batter, for a fudgy texture.
  12. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment overhang and cutting them into squares.
