  • 4 cups whole milk
  • 1/2 cup granulated sugar

Instructions

  1. Combine the rice, whole milk, sugar, and salt in a large, heavy-bottomed saucepan.
  2. Place the saucepan over medium heat. Stir frequently to prevent the rice from sticking to the bottom.
  3. Bring the mixture to a gentle simmer. Reduce the heat to low once simmering.
  4. Cook uncovered for 45 to 60 minutes, stirring every 5 to 10 minutes. The pudding thickens as the liquid reduces and the rice softens. You want a thick, creamy texture, similar to a thick oatmeal.
  5. Remove the saucepan from the heat. Stir in the vanilla extract.
  6. If you prefer a thicker pudding, allow it to cool slightly; it will continue to thicken as it cools.
  7. Serve warm, sprinkled with ground cinnamon, or chill completely for a firmer texture.

  • For a richer, more decadent pudding, substitute 1 cup of the whole milk with heavy cream.
