  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups semi-sweet chocolate chips
  • Flaked sea salt, for sprinkling (optional)

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set this dry mixture aside.
  3. In a large bowl, use an electric mixer to beat the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 3 minutes.
  4. Beat in the vanilla extract, then add the eggs one at a time, mixing well after each addition. Scrape down the sides of the bowl as needed.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix the dough.
  6. Stir in the chocolate chips by hand using a spatula.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, placing them about 2 inches apart. For thicker cookies, press the dough balls slightly higher rather than flattening them.
  8. Bake for 9 to 11 minutes. The edges should look golden brown, but the centers should still look slightly soft and underbaked.
  9. Remove the sheets from the oven. If desired, immediately sprinkle the tops of the cookies with a pinch of flaked sea salt.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. These cookies are best enjoyed warm for a gooey center.

Notes

  • For the best chewy texture, chill the cookie dough for at least 30 minutes before baking. This prevents the cookies from spreading too much.
  • Use a mix of chocolate chips and chopped chocolate bars for varied melting textures.
  • If you prefer crispier edges, bake the cookies for an additional 1 to 2 minutes.
