1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, drained and chopped
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1/2 teaspoon dried Italian seasoning

Instructions
Season the shrimp lightly with salt and pepper.
Heat olive oil and butter in a large skillet over medium heat.
Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
Add the shrimp to the skillet and cook for 2-3 minutes per side until pink and opaque. Remove the shrimp from the skillet and set aside.
