Make a delicious, moist banana bread without any added refined sugar. This recipe relies on very ripe bananas and applesauce for natural sweetness, making it a healthy, guilt-free quick bread.

Ingredients

Scale
  • 3 very ripe medium bananas, mashed
  • 1/2 cup unsweetened applesauce
  • 1/3 cup melted unsalted butter or coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour (or use a gluten-free blend)
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, mash the ripe bananas until mostly smooth.
  3. Stir in the applesauce, melted butter or oil, eggs, and vanilla extract until combined.
  4. In a separate medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients. Mix only until just combined; do not overmix the batter.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before carefully transferring it to a wire rack to cool completely.

Notes

  • For the best flavor and moisture, use bananas that are heavily spotted or almost black.
  • If you want a low-carb option, substitute the flour with 2 cups of almond flour and add 1 teaspoon of xanthan gum.
  • You can add 1/2 cup of chopped walnuts or pecans for texture.
  • This bread is diabetic friendly because it contains no added sugar.
