Ingredients
Scale
8 slices thick-cut brioche bread
8 ounces cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup fresh strawberries, thinly sliced
1 cup milk
2 large eggs
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter, for cooking
Powdered sugar, for dusting
Maple syrup, for serving
Instructions
In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until the mixture is smooth and creamy. Stir in the 1 large egg until just combined.
Gently spread half of the cream cheese mixture onto one side of four slices of brioche bread. Arrange the sliced strawberries over the cream cheese layer. Top with the remaining four slices of bread to form four sandwiches. Gently press the edges to seal.
In a shallow dish, whisk together the milk, 2 large eggs, cinnamon, and nutmeg until well blended. This is your custard batter.
Dip each stuffed sandwich into the custard batter, turning to coat both sides. Work quickly so the bread does not become too soggy.
Heat the butter in a large skillet or griddle over medium heat. Cook the stuffed French toast for 3 to 4 minutes per side, until golden brown and the filling is warm. Adjust heat as needed to prevent burning.
Serve immediately, dusted generously with powdered sugar and a side of warm maple syrup.
Notes
For the best texture, use thick-cut brioche or challah bread; thin bread may tear when stuffed.
If you want a crispier exterior, lightly dredge the dipped toast in a small amount of cinnamon-sugar before placing it on the griddle.
You can prepare the cream cheese filling and slice the strawberries a day ahead to speed up your morning prep time.
