Make this hearty, comforting slow cooker chicken stew with minimal effort. Tender chicken and vegetables simmer in a rich, creamy broth, making it a perfect hands-off dinner for busy weeknights or chilly days.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 large onion, chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 cups potatoes, cubed (Yukon Gold or Russet)
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup all-purpose flour (for thickening)
  • 2 tablespoons butter (optional, for richness)

Instructions

  1. Place the chicken pieces, chopped onion, carrots, celery, and potatoes into the basin of your slow cooker.
  2. Sprinkle the thyme, rosemary, salt, and pepper over the ingredients.
  3. Pour the chicken broth over everything in the slow cooker.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the chicken is tender.
  5. Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  6. In a small bowl, whisk together the flour and heavy cream until smooth to create a slurry.
  7. Stir the cream mixture into the stew. Add the frozen peas.
  8. Cover and cook on HIGH for an additional 15 to 20 minutes, or until the stew has thickened to your liking. If using butter, stir it in now until melted.
  9. Taste and adjust seasonings before serving hot.

Notes

  • For a richer flavor, sear the chicken briefly in a hot skillet before adding it to the slow cooker.
  • If you prefer a thicker stew without using flour, mix 3 tablespoons of cornstarch with 1/4 cup of cold water and stir it into the stew during the last 30 minutes of cooking.
  • Serve this **hearty chicken dinner idea** over mashed potatoes or with crusty bread for dipping.
