Ingredients
Scale
15 ounces whole milk ricotta cheese, drained if watery
2 tablespoons heavy cream or whole milk
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup hot honey (or regular honey with a pinch of red pepper flakes)
2 tablespoons shelled pistachios, roughly chopped
1 tablespoon extra virgin olive oil for drizzling
Instructions
Place the drained ricotta cheese, heavy cream, lemon juice, salt, and pepper into a food processor.
Process the mixture for 2 to 3 minutes, stopping to scrape down the sides as needed, until the dip is completely smooth and airy.
Transfer the whipped ricotta dip to a shallow serving bowl.
Drizzle the top evenly with the hot honey.
Sprinkle the chopped pistachios over the honey.
Drizzle lightly with olive oil just before serving.
Serve immediately with crusty bread, crackers, or fresh vegetable sticks.
Notes
If you do not have a food processor, you can use a hand mixer, but you may need to whip for 5 to 7 minutes to achieve a very smooth texture.
For a savory alternative to hot honey, top this easy cheese dip with sun-dried tomatoes and fresh basil for a bruschetta dip style flavor.
This homemade ricotta dip tastes best when served within an hour of making it.
