3 very ripe medium bananas, mashed
1/2 cup plain non-fat Greek yogurt
1/4 cup melted coconut oil or butter
2 large eggs
1 teaspoon vanilla extract
1/2 cup brown sugar, packed
1 cup whole wheat flour
1/2 cup vanilla or unflavored whey protein powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a standard 9×5 inch loaf pan.
In a large bowl, mash the ripe bananas until mostly smooth.
Stir in the Greek yogurt, melted coconut oil, eggs, vanilla extract, and brown sugar until combined.
In a separate medium bowl, whisk together the whole wheat flour, protein powder, baking soda, cinnamon, and salt.
Add the dry ingredients to the wet ingredients. Mix only until just combined. Do not overmix.
Pour the batter into the prepared loaf pan.
Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
For a lower-carb option, substitute half the flour with almond flour.
Use vanilla or unflavored protein powder for the best results. Chocolate protein powder will change the color and flavor significantly.
If you want a sweeter bread, add 2 tablespoons of maple syrup to the wet ingredients.
