This slow cooker pork stew recipe delivers melt-in-your-mouth tender pork and hearty vegetables in a rich, savory gravy. It is a simple, comforting meal perfect for family dinners.

  • 3 lbs pork shoulder, cut into 1 1/2-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup dry red wine (optional, substitute with more broth)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 medium carrots, peeled and thickly sliced
  • 4 medium potatoes, peeled and quartered
  • 1/4 cup all-purpose flour
  • 1/4 cup cold water

Instructions

  1. Pat the pork cubes dry and season them with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Brown the pork in batches on all sides. Transfer the browned pork to the slow cooker insert.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Transfer the onion and garlic mixture to the slow cooker.
  5. Pour in the beef broth, red wine (if using), Worcestershire sauce, thyme, rosemary, and bay leaf into the slow cooker. Stir everything together.
  6. Cover and cook on low for 7 to 8 hours, or on high for 3 to 4 hours, until the pork is very tender.
  7. About 30 minutes before serving, stir in the carrots and potatoes. Continue cooking until the vegetables are tender.
  8. In a small bowl, whisk together the flour and cold water to create a slurry. Stir the slurry into the stew.
  9. Cover and cook for the final 30 minutes, or until the gravy has thickened. Remove the bay leaf before serving.

Notes

  • For an even richer flavor, sear the pork shoulder cubes in batches before adding them to the slow cooker.
  • If you prefer a thicker gravy, increase the slurry mixture to 1/3 cup flour and 1/3 cup cold water.
  • This comfort food stew tastes excellent served over mashed potatoes or with crusty bread for dipping.
