A simple recipe for a tender, juicy pork loin roast cooked in the oven, perfect for a weeknight or Sunday dinner, with instructions for a quick pan sauce.

  • 3 lb pork loin roast, bone-out
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 cup chicken broth (for pan sauce)
  • 1 tablespoon cornstarch (for pan sauce)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Pat the pork loin roast dry with paper towels. This helps create a better crust.
  3. In a small bowl, mix the kosher salt, black pepper, garlic powder, and dried thyme.
  4. Rub the entire surface of the pork loin evenly with the olive oil, then sprinkle and press the spice mixture onto the roast.
  5. Place the seasoned pork loin in a roasting pan or a large oven-safe skillet.
  6. Roast for 15 minutes at 400 degrees Fahrenheit.
  7. Reduce the oven temperature to 350 degrees Fahrenheit and continue roasting until the internal temperature reaches 145 degrees Fahrenheit on a meat thermometer inserted into the thickest part of the roast. This usually takes about 15 to 20 minutes per pound.
  8. Remove the roast from the oven when it reaches 145 degrees Fahrenheit.
  9. Transfer the roast to a cutting board, tent loosely with foil, and let it rest for at least 10 minutes before slicing. This resting period is key for a juicy result.
  10. While the pork rests, make the pan sauce: Place the roasting pan on the stovetop over medium heat. Scrape up any browned bits from the bottom of the pan.
  11. Whisk the chicken broth into the pan drippings. In a small bowl, mix the cornstarch with 2 tablespoons of cold water to create a slurry.
  12. Pour the slurry into the simmering liquid, stirring constantly until the sauce thickens slightly.
  13. Slice the pork loin against the grain and serve immediately with the pan sauce.

Notes

  • For the juiciest pork loin roast, do not cook past an internal temperature of 145 degrees Fahrenheit. The temperature will rise slightly during resting.
  • If you prefer a crispier exterior, you can sear the roast on all sides in an oven-safe skillet on the stovetop before placing it in the oven.
  • Use fresh herbs like rosemary or sage along with the dried thyme for added flavor.
