Make this simple, no-bake Pistachio Puppy Chow using white chocolate and pistachio pudding mix. This crunchy, sweet snack mix comes together fast and is perfect for parties or edible gifts.

  • 12 cups Rice Chex cereal
  • 1 (12 ounce) package white chocolate chips
  • 1/2 cup creamy peanut butter (or substitute with sunflower seed butter for nut-free)
  • 1 teaspoon vanilla extract
  • 1 (3.4 ounce) package instant pistachio pudding mix
  • 2 cups powdered sugar
  • Optional: 1/2 cup chopped pistachios

Instructions

  1. Measure the Rice Chex cereal into a very large bowl. Set aside.
  2. In a medium microwave-safe bowl, combine the white chocolate chips and peanut butter. Microwave in 30-second intervals, stirring well after each interval, until the mixture is smooth and completely melted. This usually takes 60 to 90 seconds total.
  3. Stir the vanilla extract into the melted white chocolate mixture.
  4. Pour the melted chocolate mixture over the cereal in the large bowl. Gently fold the cereal until it is evenly coated with the chocolate mixture.
  5. Sprinkle the instant pistachio pudding mix over the coated cereal. Gently fold again until the cereal pieces are mostly covered with the green powder. If using, fold in the chopped pistachios now.
  6. Place the powdered sugar into a large zip-top plastic bag. Add the coated cereal mixture to the bag. Seal the bag, leaving some air inside.
  7. Shake the bag vigorously until all the cereal pieces are completely coated with powdered sugar.
  8. Spread the finished Pistachio Puppy Chow onto a large baking sheet lined with wax paper to cool and set completely.
  9. Break apart any large clumps before serving or storing.

  • For the best coating, work quickly when tossing the cereal with the pudding mix before the chocolate sets.
  • Store this crunchy sweet treat in an airtight container at room temperature for up to one week.
  • You can substitute Rice Chex with Corn Chex or another similar square cereal for a different texture.
