  • 1 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 4 cups powdered sugar, sifted

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal. Lightly grease the paper.
  2. In a large bowl, beat the softened butter and creamy peanut butter together until smooth. You can use a hand mixer or stand mixer for best results.
  3. Add the vanilla extract and mix until combined.
  4. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed until fully incorporated after each addition. The mixture will become very thick.
  5. Press the fudge mixture evenly into the prepared baking pan. Use a spatula or the back of a spoon to smooth the top surface.
  6. Refrigerate the fudge for at least 2 hours, or until firm enough to cut.
  7. Use the parchment paper overhang to lift the fudge out of the pan. Cut into 1-inch squares.
