  • 12 ounces spaghetti or linguine
  • 4 cups chicken broth (or vegetable broth)
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 1 cup grated Parmesan cheese, plus more for serving
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Place the pasta, chicken broth, heavy cream, minced garlic, butter, salt, and pepper into a large, deep skillet or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat. Stir frequently to prevent the pasta from sticking to the bottom of the pan.
  3. Once boiling, reduce the heat to medium-low and continue to simmer, stirring often, for 12 to 15 minutes, or until the pasta is cooked al dente and most of the liquid has been absorbed, creating a thick sauce.
  4. Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and velvety. If the sauce seems too thick, add a splash of reserved pasta water or milk until you reach your desired consistency.
  5. Taste the pasta and adjust salt and pepper as needed.
  6. Serve immediately in bowls, topped with extra grated Parmesan cheese and fresh chopped parsley.

Notes

  • For a richer flavor, use high-quality Parmigiano-Reggiano cheese.
  • If you want a thicker sauce, let the pasta sit off the heat for an extra 5 minutes after adding the cheese; it will continue to thicken as it cools slightly.
