Ingredients

Scale
  • 2 lbs ground beef (80/20 recommended)
  • 1 cup bread crumbs
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1/2 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup ketchup (for topping)
  • 1 tablespoon brown sugar (mixed with ketchup)

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the ground beef, bread crumbs, egg, milk, onion, salt, pepper, parsley, and Worcestershire sauce. Mix gently with your hands until just combined. Do not overmix.
  3. Press the meat mixture evenly into the prepared baking dish to form the base layer.
  4. In a small bowl, mix the ketchup and brown sugar together. Spread this mixture evenly over the top of the meat base.
  5. Bake for 30 minutes.
  6. While the meatloaf bakes, combine the cheddar and Monterey Jack cheeses in a separate bowl.
  7. After 30 minutes, remove the casserole from the oven. Sprinkle the cheese mixture evenly over the ketchup topping.
  8. Return the casserole to the oven and bake for an additional 10 to 15 minutes, or until the cheese is melted and bubbly and the internal temperature of the meat reaches 160 degrees Fahrenheit.
  9. Let the Cheesy Loaded Meatloaf Casserole rest for 5 minutes before slicing and serving.

Notes

  • For a Potato Meatloaf Casserole variation, layer 2 cups of pre-cooked, sliced potatoes over the meat base before adding the ketchup topping.
  • You can prepare the meat mixture and assemble the casserole (without the cheese topping) up to 24 hours ahead. Cover and refrigerate. Add 10 minutes to the initial bake time if baking cold.
  • Use high-quality ground beef for the best savory flavor in this simple ground beef casserole.
