This recipe brings the true flavor of the Chesapeake Bay to your kitchen. You get a hearty, tomato-based Maryland Crab Soup loaded with fresh vegetables and sweet lump blue crab meat, seasoned perfectly with Old Bay.

  • 1 (28 ounce) can crushed tomatoes
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup fresh or frozen corn kernels
  • 1 cup fresh or frozen green beans, cut into 1-inch pieces
  • 1/2 cup dry sherry (optional)
  • 2 tablespoons Old Bay Seasoning
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1 bay leaf
  • 1 pound lump blue crab meat, picked over for shells
  • 1/4 cup tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Creole seasoning (optional, for extra spice)

Instructions

  1. In a large stockpot, combine the beef broth, crushed tomatoes, onion, celery, carrots, corn, green beans, sherry (if using), Old Bay Seasoning, black pepper, salt, bay leaf, and tomato paste.
  2. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 30 minutes, allowing the vegetables to soften and the flavors to meld.
  3. Stir in the Worcestershire sauce and Creole seasoning (if using). Continue to simmer for another 10 minutes.
  4. Gently fold in the lump blue crab meat. Heat through for about 5 minutes. Do not boil after adding the crab meat, as this can toughen it.
  5. Remove and discard the bay leaf before serving. Taste the soup and adjust salt and pepper as needed.
  6. Serve your hearty seafood soup hot, often with oyster crackers on the side.

Notes

  • For the most authentic Chesapeake Bay flavor, use high-quality lump blue crab meat.
  • If you prefer a slightly thicker soup, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the simmering broth before adding the crab.
  • This soup tastes even better the next day, making it great for meal prep.
