2 large boneless, skinless chicken breasts, halved horizontally to make 4 thin cutlets
1 tablespoon olive oil
1 tablespoon butter
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder

1/2 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup sun-dried tomatoes, drained and chopped
2 cloves garlic, minced
1/4 cup fresh basil, chopped (for garnish)
Instructions
Season the chicken cutlets on both sides with salt, pepper, garlic powder, and Italian seasoning.
Heat the olive oil and butter in a large skillet over medium-high heat.
Place the seasoned chicken in the hot skillet and sear for 4 to 5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer for 1 minute.
Stir in the heavy cream and the chopped sun-dried tomatoes. Bring the sauce to a gentle simmer.
