Make this simple, flavorful marinated cheese appetizer ahead of time for your next party or gathering. Cubes of cheese soak up herbs, garlic, and oil for a gourmet snack.

  • 1 pound firm cheese (like Havarti, Monterey Jack, or Colby), cut into 1-inch cubes
  • 1 cup olive oil
  • 1/4 cup white wine vinegar
  • 4 cloves garlic, thinly sliced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional additions: 1/2 cup sliced green olives, 1/4 cup sun-dried tomatoes

Instructions

  1. Cut the cheese into uniform 1-inch cubes. Place the cheese cubes into a clean, non-reactive container or a large, sealable plastic bag.
  2. In a separate bowl, whisk together the olive oil, white wine vinegar, sliced garlic, oregano, basil, thyme, red pepper flakes, salt, and black pepper. If using, add the olives and sun-dried tomatoes to the marinade mixture.
  3. Pour the marinade mixture over the cheese cubes, making sure all pieces are submerged. If using a container, gently stir to coat. If using a bag, press out excess air and seal it.
  4. Refrigerate the cheese and marinade for at least 12 hours, or preferably 24 to 48 hours, to allow the cheese to absorb the flavors.
  5. When ready to serve, let the cheese sit at room temperature for about 15 minutes before arranging it on a serving platter or cheese board.
  6. Serve the marinated cheese cubes with crackers, crusty bread, or toothpicks for easy serving.

Notes

  • For the best flavor, use good quality olive oil. This is a key component of the marinade.
  • You can substitute the hard cheeses with fresh mozzarella balls (bocconcini), but reduce the marinating time to 6 hours.
  • This is a perfect make ahead appetizer; it tastes better the longer it marinates, up to 3 days.
