Cook a tender and moist turkey breast quickly in your Instant Pot. This recipe uses an herb butter rub and includes instructions for making a simple gravy from the pot drippings, making it a perfect, fast roast for weeknight dinners or small holiday gatherings.

  • 1 (3 to 4 pound) boneless turkey breast, skin on or off
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon fresh rosemary, minced
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1/2 cup water
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water (for slurry)

Instructions

  1. Combine the softened butter with minced rosemary, thyme, garlic powder, onion powder, salt, and pepper in a small bowl to create the herb butter.
  2. Pat the turkey breast dry with paper towels. Rub the herb butter mixture evenly over the entire surface of the turkey breast.
  3. Pour 1 cup of chicken broth and 1/2 cup of water into the inner pot of your Instant Pot. Place the trivet inside the pot.
  4. Carefully place the seasoned turkey breast on top of the trivet.
  5. Secure the lid on the Instant Pot and set the vent to the sealing position.
  6. Select the Manual or Pressure Cook setting and set the time for 50 minutes on High Pressure for a 3-4 pound turkey breast.
  7. When the cooking cycle finishes, allow a Natural Pressure Release (NPR) for 15 minutes. After 15 minutes, carefully switch the valve to the venting position to release any remaining pressure.
  8. Remove the turkey breast from the pot and place it on a cutting board. Tent loosely with foil and let it rest for 10 minutes before slicing.
  9. To make gravy, carefully pour the liquid from the Instant Pot into a fat separator or a bowl. You should have about 1.5 cups of liquid.
  10. In a small bowl, whisk together 1 tablespoon of cornstarch and 2 tablespoons of cold water to create a slurry.
  11. Pour the pot liquid into the Instant Pot liner (or a saucepan). Bring the liquid to a simmer over the Sauté function. Whisk in the cornstarch slurry until the gravy thickens slightly. Taste and adjust seasoning if needed.
  12. Slice the turkey breast against the grain and serve immediately with the homemade gravy.

Notes

  • For extra flavor, you can place citrus slices (like orange or lemon) inside the pot along with the broth.
  • If your turkey breast is larger than 4 pounds, increase the cooking time by 5 minutes per additional pound.
  • This pressure cooker poultry recipe works well with boneless turkey breast.
