1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1 tablespoon olive oil
1 head broccoli, cut into florets
2 carrots, thinly sliced
1 red bell pepper, sliced
1/2 cup low-sodium soy sauce
1/2 cup honey
1/4 cup water
2 tablespoons rice vinegar
4 cloves garlic, minced
1 teaspoon ground ginger
1 tablespoon cornstarch
2 tablespoons cold water (for slurry)
Cooked rice or noodles, for serving
Sesame seeds, for garnish
Instructions
In a small bowl, whisk together the soy sauce, honey, 1/4 cup water, rice vinegar, minced garlic, and ginger. Set aside.
In a separate small bowl, mix the cornstarch and 2 tablespoons of cold water until smooth to create a slurry. Set aside.
Heat the olive oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the broccoli, carrots, and bell pepper to the same skillet. Stir fry for 4-6 minutes until the vegetables are crisp-tender.
Return the cooked chicken to the skillet with the vegetables.
Pour the reserved honey garlic sauce mixture over the chicken and vegetables. Bring the sauce to a simmer.
Stir the cornstarch slurry one more time and pour it into the simmering sauce. Stir constantly until the sauce thickens and becomes glossy, about 1 minute.
Remove from heat immediately. Serve the honey garlic chicken stir fry over rice or noodles. Garnish with sesame seeds.
Notes
For extra flavor, use chicken thighs instead of breasts for a juicier result.
If you want a spicier kick, add 1/2 teaspoon of red pepper flakes to the sauce mixture.
