Make this comforting Homemade Reuben Bake for a hearty, cheesy dinner. This casserole brings the classic deli sandwich flavors together in one simple, satisfying dish perfect for weeknights or family gatherings.

  • 1 pound sliced corned beef, chopped
  • 1 (16 ounce) can sauerkraut, drained well and squeezed dry
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 1 teaspoon caraway seeds
  • 1/2 cup Thousand Island dressing
  • 1 tablespoon Dijon mustard
  • 1 pound Swiss cheese, shredded
  • 8 cups rye bread, cut into 1-inch cubes (about 68 slices)
  • 1/2 cup reserved shredded Swiss cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. In a medium skillet over medium heat, melt the butter. Add the chopped onion and cook until soft, about 5 minutes. Stir in the caraway seeds and cook for 1 minute more until fragrant. Remove from heat.
  3. In a large bowl, combine the chopped corned beef, drained sauerkraut, cooked onion mixture, Thousand Island dressing, and Dijon mustard. Mix gently until everything is coated.
  4. In a separate large bowl, toss the rye bread cubes with 1/2 of the shredded Swiss cheese.
  5. Spread half of the bread and cheese mixture evenly in the bottom of the prepared baking dish.
  6. Spoon the corned beef and sauerkraut mixture over the bread layer, spreading it out evenly.
  7. Top the meat mixture with the remaining bread and cheese mixture.
  8. Sprinkle the remaining 1/2 cup of reserved shredded Swiss cheese over the top layer.
  9. Bake for 25 to 30 minutes, or until the casserole is hot throughout and the cheese on top is melted and lightly golden brown.
  10. Let the casserole rest for 5 minutes before cutting into squares and serving this easy comfort food dinner.
