Make this easy, hearty Italian Grinder Salad, a low-carb version of the classic grinder sandwich. It features crisp lettuce, deli meats, cheese, and a tangy Italian dressing.

  • 1 head iceberg lettuce, finely chopped
  • 1 cup chopped salami
  • 1 cup chopped turkey breast
  • 1 cup chopped ham
  • 1 cup provolone cheese, cubed or shredded
  • 1/2 cup sliced pepperoncini or banana peppers
  • 1/2 cup chopped red onion
  • 1/2 cup chopped tomatoes
  • 1/4 cup grated Parmesan cheese
  • For the Dressing: 1/2 cup olive oil
  • For the Dressing: 1/4 cup red wine vinegar
  • For the Dressing: 1 teaspoon Dijon mustard
  • For the Dressing: 1 clove garlic, minced
  • For the Dressing: 1/2 teaspoon dried oregano
  • For the Dressing: Salt and black pepper to taste

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and pepper until well combined. Set aside.
  2. Prepare the base: In a large bowl, combine the chopped iceberg lettuce, salami, turkey, ham, provolone cheese, pepperoncini, red onion, and tomatoes.
  3. Dress the salad: Pour the prepared Italian dressing over the salad ingredients.
  4. Toss gently: Toss all ingredients together until the lettuce and meats are lightly coated with the dressing.
