1/2 cup raw pumpkin seeds
1/2 cup unsweetened shredded coconut
1/4 cup molasses
1/4 cup maple syrup
1/4 cup melted coconut oil or neutral oil
2 teaspoons ground ginger
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup dried cranberries (added after baking)
Instructions
Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.
In a large bowl, combine the rolled oats, chopped nuts, pumpkin seeds, and shredded coconut.
In a separate small bowl, whisk together the molasses, maple syrup, melted oil, ground ginger, cinnamon, cloves, nutmeg, and salt until fully mixed.
Pour the wet mixture over the dry ingredients. Use a spatula to mix everything thoroughly until the oats and nuts are evenly coated.
Spread the granola mixture in a thin, even layer onto the prepared baking sheet. Press it down lightly if you want larger clusters.
Bake for 25 to 30 minutes, stirring halfway through to prevent burning. For larger clusters, stir only once or not at all.
Remove the baking sheet from the oven. Immediately drizzle the vanilla extract over the hot granola and gently toss.
Let the granola cool completely on the baking sheet without stirring. Cooling is key for maximum crunch.
Once completely cool, break the granola into pieces. Stir in the dried cranberries.
Store your homemade crunchy granola in an airtight container at room temperature.
Notes
For larger granola clusters, avoid stirring the granola after the first 15 minutes of baking.
