Instructions
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
Place the cottage cheese in a food processor or blender and process until completely smooth, about 1 minute. Scrape down the sides as needed.
Separate the egg whites from the yolks. Place the yolks in a small bowl and set aside.
Add the egg yolks to the smooth cottage cheese mixture and blend briefly until just combined.
In a separate, clean, dry mixing bowl, add the egg whites and cream of tartar. Beat with an electric mixer on high speed until stiff peaks form. This takes about 3 to 5 minutes.
Gently fold one-third of the stiff egg whites into the cottage cheese mixture to lighten it.
Carefully fold in the remaining egg whites until no white streaks remain, taking care not to deflate the mixture. You want to keep the air in the batter.
Drop the batter onto the prepared baking sheet in four equal mounds, shaping them into rounds about 4 inches wide. Sprinkle lightly with salt.
Bake for 25 to 30 minutes, or until the cloud bread is golden brown and firm to the touch.
Turn off the oven, crack the door open slightly, and let the cloud bread cool inside for 10 minutes before removing it completely. Use immediately for sandwiches or store as directed.

For the lightest texture, ensure your mixing bowl for the egg whites is completely free of grease or water.
If you do not have a food processor, you can use a fine-mesh sieve to press the cottage cheese until smooth.
