1 pound ground beef or sausage
1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
1 (16 ounce) package Velveeta cheese, cut into cubes
1 (8 ounce) package cream cheese, cut into cubes
1 teaspoon taco seasoning (optional)
Instructions
Brown the ground beef or sausage in a large skillet over medium heat. Drain off any excess grease.
Return the meat to the skillet. Add the Rotel tomatoes (do not drain), Velveeta cubes, cream cheese cubes, and taco seasoning if you are using it.
Stir the mixture constantly over low heat until all the cheese is completely melted and the dip is smooth and creamy. This usually takes about 10 to 15 minutes. Do not let the dip boil.
Transfer the hot cheese dip to a slow cooker set to the ‘Warm’ setting for serving, or serve immediately with tortilla chips.
Notes
For a slow cooker version, combine all ingredients in a small slow cooker and cook on low for 1 to 2 hours, stirring occasionally until smooth.
Serve this ultimate cheesy dip with sturdy tortilla chips, crackers, or vegetable sticks.
If the dip thickens while sitting out, stir in a tablespoon of milk or a splash of Rotel juice to restore creaminess.
