  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 large egg
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni slices
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  5. Gently fold in the pizza sauce, mozzarella cheese, and pepperoni slices into the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Sprinkle the tops of the muffins with the grated Parmesan cheese.
  8. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These pizza muffins freeze well for quick lunch additions. Cool completely before freezing in an airtight container.
  • You can substitute your favorite pizza toppings, such as cooked sausage or chopped bell peppers.
  • For a richer flavor, use whole milk in the recipe.
