Ingredients
Scale
1 cup creamy peanut butter
1 large egg
1/2 cup granulated sugar
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the peanut butter, egg, and granulated sugar. Mix until fully incorporated and a stiff dough forms.
Roll the dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
Use a fork to press down on each ball, creating a crisscross pattern on top.
Bake for 10 to 12 minutes, or until the edges are lightly set. Do not overbake.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a slightly chewier cookie, substitute the granulated sugar with packed light brown sugar.
If you prefer a more traditional texture, add 1/2 cup of all-purpose flour to the dough mixture.
For a classic peanut butter cookie look, use a fork to press the crisscross pattern onto the dough balls before baking.
