1/2 cup shredded Monterey Jack cheese
1/4 cup shredded white cheddar cheese

1/4 cup cooked, crumbled bacon (optional, for flavor variation)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin or silicone muffin molds.
In a blender, combine the cottage cheese, eggs, salt, pepper, and garlic powder. Blend until the mixture is completely smooth and creamy. This step is key for achieving the fluffy texture.
If using bacon, stir the crumbled bacon into the blended egg mixture.
Divide the shredded Monterey Jack and white cheddar cheeses evenly among the prepared muffin cups.
Carefully pour the blended egg mixture over the cheese in each cup, filling them about three-quarters full.
Place the muffin tin into the oven and bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted in the center comes out clean.
Remove the tin from the oven and let the egg bites cool in the tin for about 5 minutes before carefully removing them.
