1 pound ground beef
1 packet taco seasoning mix
1 head iceberg or romaine lettuce, chopped
1 cup shredded cheddar cheese
1 cup diced tomatoes
1/2 cup sliced black olives
1/2 cup Catalina dressing (or your preferred taco dressing)
Cook the ground beef in a large skillet over medium heat until browned. Drain off any excess fat.
Stir the taco seasoning mix and the amount of water specified on the seasoning packet into the cooked beef. Simmer according to package directions until the sauce thickens slightly. Remove from heat.
In a very large bowl, layer the ingredients. Start with the chopped lettuce as the base.
Top the lettuce evenly with the seasoned ground beef mixture.
Sprinkle the shredded cheese, diced tomatoes, and sliced black olives over the beef layer.
Drizzle the Catalina dressing over the top of the salad ingredients.
Just before serving, scatter the slightly crushed Doritos over the top layer for crunch.
Toss gently just before serving to combine the ingredients.
Notes
For a layered presentation, assemble the salad in a glass trifle dish instead of tossing it in a bowl.
You can substitute the ground beef with ground turkey or black beans for a different protein option.
If you prefer a homemade dressing, mix 1/2 cup Catalina dressing with 2 tablespoons of salsa.
