  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning (store-bought or homemade)
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried Italian herbs
  • Salt and black pepper to taste
  • Optional: Cooked rice or pasta for serving

Instructions

  1. Season the cut chicken pieces evenly with 1 tablespoon of the Cajun seasoning, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add the diced onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the remaining 1 tablespoon of Cajun seasoning and the Italian herbs. Cook for 30 seconds.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for 2 minutes.
  6. Stir in the heavy cream and bring the mixture to a gentle simmer. Cook until the sauce thickens slightly, about 3 to 4 minutes.
  7. Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. Taste the sauce and adjust salt or seasoning if needed.
  8. Return the cooked chicken to the skillet. Stir to coat the chicken completely in the creamy Cajun sauce. Heat through for 1 minute.
  9. Serve immediately over cooked rice or your favorite pasta for a complete meal.
