Instructions
Season the cut chicken pieces evenly with 1 tablespoon of the Cajun seasoning, salt, and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Reduce the heat to medium. Add the diced onion to the same skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute until fragrant.
Stir in the remaining 1 tablespoon of Cajun seasoning and the Italian herbs. Cook for 30 seconds.
