  • 1 pound penne or rotini pasta
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk (optional, for thinning)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta, reserving about 1/2 cup of the starchy cooking water. Set the cooked pasta aside.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it is fully browned. Drain off any excess grease.
  3. Reduce the heat to medium. Add the minced garlic, Italian seasoning, salt, and pepper to the beef. Cook for 1 minute until the garlic is fragrant.
  4. Pour in the beef broth and bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet. Let it simmer for 2 minutes to reduce slightly.
  5. Stir in the heavy cream and bring the sauce back to a gentle simmer. Do not allow it to boil rapidly.
  6. Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  7. Add the cooked and drained pasta to the skillet. Toss everything together until the pasta is evenly coated in the rich beef sauce.
  8. If the sauce seems too thick, add a splash of the reserved pasta water or milk until you reach your desired consistency.
  9. Serve the creamy beef pasta immediately, garnished with fresh parsley.

Notes

  • For a richer flavor, substitute half of the beef broth with dry red wine and let it cook down before adding the cream.
  • You can add 1 cup of frozen peas or chopped mushrooms along with the beef broth for added vegetables.
