Make this simple, savory beer bread without yeast or kneading. It bakes quickly into a loaf with a crisp, buttery crust and a soft, fluffy center, perfect for serving with soup or chili.

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup sharp cheddar cheese, shredded
  • 2 tablespoons garlic powder
  • 1 (12 ounce) bottle of beer (lager or pale ale recommended)
  • 1/2 cup (1 stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Grease and flour a standard 9×5 inch loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, salt, cheddar cheese, and garlic powder. Mix until the cheese and seasonings are evenly distributed.
  3. Pour the entire bottle of beer into the dry ingredients. Stir the mixture gently with a spoon until just combined. Do not overmix; a few lumps are fine.
  4. Pour the melted butter over the batter in the bowl and stir briefly, just enough to incorporate some of the butter.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 45 to 55 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool slightly before slicing.

Notes

  • For an even crispier crust, brush the top of the batter with 1 tablespoon of the melted butter just before baking.
  • If you prefer a milder flavor, use a lighter beer. For a deeper flavor, use a darker beer.
  • This bread pairs well as an easy dinner side for chili or stew.
