Make this easy, cheesy, and satisfying ground beef and Doritos casserole for a quick weeknight dinner.

Ingredients

Scale
  • 1 pound ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup milk
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1 bag (9.75 ounces) Nacho Cheese Doritos, lightly crushed
  • 1 cup water

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef in a large skillet over medium heat. Drain off any excess grease.
  3. Stir the taco seasoning mix and water into the ground beef. Cook according to seasoning packet directions, usually about 5 minutes, until the liquid is mostly absorbed.
  4. In a large bowl, combine the cream of chicken soup, cream of mushroom soup, milk, and sour cream. Mix well.
  5. Fold in 1.5 cups of the shredded cheddar cheese and half of the crushed Doritos into the soup mixture.
  6. Spread half of the meat mixture evenly over the bottom of the prepared baking dish.
  7. Spoon half of the creamy Doritos mixture over the meat layer. Repeat with the remaining meat and creamy mixture layers.
  8. Top the casserole evenly with the remaining crushed Doritos.
  9. Bake for 25 minutes.
  10. Remove the casserole from the oven and sprinkle the remaining 0.5 cup of cheddar cheese over the top.
  11. Return to the oven and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
  12. Let the casserole rest for 5 minutes before serving.

Notes

  • For extra flavor, add 1 can (15 ounces) of drained black beans with the ground beef mixture.
  • You can substitute Nacho Cheese Doritos with Cool Ranch Doritos for a different flavor profile.
  • Use Colby Jack cheese instead of cheddar for a milder taste.
