  • 1.5 lbs boneless, skinless chicken breasts
  • 1 (15 ounce) can white beans (Great Northern or cannellini), rinsed and drained
  • 1 (15 ounce) can white beans, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 (10 ounce) can Rotel (diced tomatoes and green chilies), undrained
  • 1 cup chicken broth
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 4 ounces cream cheese, cut into cubes
  • Salt and black pepper to taste

Instructions

  1. Place the raw chicken breasts into the bottom of your slow cooker.
  2. Pour the undrained can of white beans, the Rotel, and the diced green chilies over the chicken.
  3. Add the chicken broth, ranch seasoning mix, cumin, oregano, and cayenne pepper (if using) to the slow cooker. Do not stir yet.
  4. Place the cubes of cream cheese evenly over the top of the ingredients.
  5. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  6. Once cooking time is complete, remove the chicken breasts and shred them using two forks.
  7. Return the shredded chicken to the slow cooker. Stir everything together until the cream cheese is fully melted and the chili is creamy.
  8. Taste the chili and add salt and pepper as needed.
  9. Serve hot with your favorite toppings.
