Crockpot French Onion Meatloaf with Melted Swiss Cheese

Make this incredibly juicy and flavorful meatloaf using your slow cooker. It captures the savory depth of French onion soup and finishes with a layer of gooey Swiss cheese for the ultimate comfort food dinner.

  • 2 lbs ground beef
  • 1 large yellow onion, finely chopped and caramelized
  • 1 (10.5 ounce) can condensed French onion soup, undiluted
  • 1/2 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, combine the ground beef, caramelized onion, French onion soup, breadcrumbs, egg, Worcestershire sauce, thyme, and pepper. Mix gently with your hands until just combined; do not overmix.
  2. Shape the mixture into a loaf shape and place it in the bottom of a lightly greased 5 or 6-quart slow cooker.
  3. Cover the slow cooker and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the meatloaf reaches an internal temperature of 160 degrees Fahrenheit.
  4. About 15 minutes before the cooking time ends, remove the lid and place the Swiss cheese slices evenly over the top of the meatloaf. Replace the lid and allow the cheese to melt completely.
  5. Carefully remove the meatloaf from the slow cooker using two large spatulas. Let it rest for 5 minutes before slicing and serving.

Notes

  • To caramelize the onion, cook it slowly in a skillet over low heat with a tablespoon of butter until soft and deeply browned, about 20 minutes.
  • For a richer flavor, use half ground beef and half ground chuck.
  • Serve this easy Crockpot dinner with mashed potatoes or egg noodles to soak up the savory juices.
