Ingredients

  • 2 pounds beef stew meat or sirloin steak, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 1 (10.5 ounce) can condensed cream of celery soup
  • 1 cup beef broth
  • 1 packet (1 ounce) dry onion soup mix
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons cornstarch
  • 1/4 cup cold water
  • For serving: Egg noodles or mashed potatoes

Instructions

  1. Pat the beef tips dry with paper towels and season lightly with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Brown the beef tips in batches until they have color on all sides. Do not overcrowd the pan. Place the browned beef into the basin of your slow cooker.
  3. Add the chopped onion and minced garlic to the same skillet and cook until softened, about 3 to 5 minutes. Scrape up any browned bits from the bottom of the pan.
  4. Add the browned beef, cream of mushroom soup, cream of celery soup, beef broth, dry onion soup mix, Worcestershire sauce, and thyme to the slow cooker. Stir everything together until combined.
  5. Cover the slow cooker and cook on LOW for 7 to 8 hours or on HIGH for 3 to 4 hours, until the beef is very tender.
  6. About 30 minutes before serving, prepare the gravy thickener. In a small bowl, whisk together the cornstarch and cold water until smooth.
  7. Stir the cornstarch slurry into the slow cooker mixture. Cover and cook on HIGH for an additional 15 to 20 minutes, or until the gravy has thickened to your liking. Taste and adjust salt and pepper as needed.
  8. Serve the tender Crockpot Beef Tips and rich savory gravy over hot egg noodles or creamy mashed potatoes.

Notes

  • For an even richer flavor, you can substitute 1/2 cup of dry red wine for 1/2 cup of the beef broth.
  • If you prefer a creamier finish, stir in 1/4 cup of sour cream or heavy cream after the gravy has thickened, just before serving. Do not let it boil after adding cream.
