  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 3 cups fresh spinach
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 5 to 7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F). Remove the chicken from the skillet and set aside.
  4. Reduce the heat to medium. Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Add the chicken broth and chopped sun-dried tomatoes to the skillet. Scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
