Make this easy, creamy cheesy rice on the stovetop in under 30 minutes. It uses simple ingredients like cheddar and Parmesan for a comforting side dish perfect for any meal.

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk or half-and-half
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

  1. Heat the butter and olive oil in a large, deep skillet or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 4 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic burn.
  4. Add the uncooked rice to the skillet and stir constantly for 1 minute to toast the grains lightly.
  5. Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover the skillet tightly, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  7. Remove the skillet from the heat. Stir in the milk or half-and-half.
  8. Add the shredded cheddar cheese and grated Parmesan cheese. Stir gently until the cheeses are completely melted and the rice is creamy.
  9. Let the rice stand, covered, for 5 minutes before serving.
  10. Garnish with fresh parsley, if desired. Serve hot as a side dish or main course.

Notes

  • For extra flavor, substitute half of the chicken broth with vegetable broth.
  • If you want a richer texture, substitute the milk with 1/4 cup of cream cheese cut into cubes during the final stirring step.
  • This recipe works best with long-grain white rice; avoid using instant rice.
