  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 4 slices bacon, cooked and crumbled
  • 1 (16 ounce) package potato gnocchi
  • 1 cup low-sodium chicken broth
  • 8 ounces cream cheese, cut into cubes
  • 1 packet (1 ounce) dry ranch seasoning mix
  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup water (if needed for thinning)
  • Salt and black pepper to taste
  • Optional: 1 cup fresh spinach

Instructions

  1. Season the chicken pieces lightly with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  2. Add the crumbled bacon to the same skillet and cook briefly until crisp. Remove the bacon with a slotted spoon and set it aside with the chicken.
  3. Add the gnocchi and chicken broth to the skillet. Bring the liquid to a simmer and cook according to package directions, usually about 3 to 5 minutes, until the gnocchi are tender.
  4. Reduce the heat to low. Stir in the cream cheese cubes, dry ranch seasoning mix, and heavy cream. Stir constantly until the cream cheese melts and the sauce is smooth.
  5. Return the cooked chicken to the skillet. If using spinach, stir it in now until it wilts.
  6. Stir in the shredded cheddar cheese and Parmesan cheese until the sauce is thick and creamy. If the sauce is too thick, add water, one tablespoon at a time, until you reach your desired consistency.
  7. Taste the dish and adjust seasoning with more salt and pepper if needed.
  8. Serve immediately, topped with the reserved crumbled bacon.

  • For a richer flavor, use chicken thighs instead of breasts.
  • You can substitute frozen gnocchi; just add a minute or two to the cooking time in the broth.
