Make this creamy, cheesy queso dip using cottage cheese for a high-protein, low-guilt snack or appetizer. It blends quickly and is ready in minutes.

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup salsa (mild or medium)
  • 1 teaspoon taco seasoning
  • 1/4 cup milk or water (optional, for thinning)
  • 1 tablespoon diced jalapeño (optional)

Instructions

  1. Place the cottage cheese, cheddar cheese, salsa, and taco seasoning into a food processor or high-speed blender.
  2. Blend the mixture until it is completely smooth and creamy, scraping down the sides as needed. This step takes about 1-2 minutes.
  3. If the queso is too thick, add milk or water one tablespoon at a time while blending until you reach your desired consistency.
  4. Transfer the blended queso to a microwave-safe bowl.
  5. Microwave in 30-second intervals, stirring well after each interval, until the queso is hot throughout, usually about 1 minute total.
  6. Stir in diced jalapeños, if using.
  7. Serve immediately with tortilla chips, vegetables, or as a topping for tacos or nachos.

Notes

  • For a richer flavor, substitute 1/4 cup of the cottage cheese with 1/4 cup of cream cheese before blending.
  • If you do not have a blender, you can use an immersion blender directly in a saucepan over low heat, but blend first before heating for the smoothest texture.
