1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup low-fat cottage cheese
1/2 cup plain Greek yogurt
1/4 cup maple syrup or honey (for low sugar, use a sugar substitute)
1 large egg
1 teaspoon vanilla extract
1/2 cup fresh or frozen blueberries
1 tablespoon lemon zest (optional, for extra flavor)
Instructions
Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
In a small bowl, whisk together the flour, oats, baking powder, baking soda, and salt. Set this dry mixture aside.
In a separate large bowl, combine the cottage cheese, Greek yogurt, maple syrup (or sweetener), egg, vanilla extract, and lemon zest if using. Mix until mostly smooth. For an extra smooth texture, you can blend the wet ingredients in a blender.
Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix; a few lumps are fine.
Gently fold in the blueberries. If using frozen blueberries, do not thaw them first.
Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a gluten-free option, substitute the all-purpose flour with a 1:1 gluten-free baking blend.
These muffins freeze well. Cool them completely, then store them in an airtight, freezer-safe bag for up to three months. Thaw overnight on the counter for a quick breakfast.
To boost the protein further, add 1 scoop of unflavored or vanilla protein powder to the dry ingredients. You may need to add 1-2 tablespoons of milk if the batter seems too thick.
