Make this single-serve, fudgy cottage cheese microwave brownie when you need a fast, high-protein chocolate fix. It is ready in under five minutes and satisfies sweet cravings without complicated baking.

Ingredients

Scale
  • 1/4 cup cottage cheese (full fat or low fat)
  • 1 large egg
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon sweetener (like erythritol or maple syrup)
  • 1 teaspoon melted coconut oil or butter
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon baking powder
  • 1 tablespoon chocolate chips (optional)

Instructions

  1. Combine the cottage cheese and egg in a microwave-safe mug or small bowl. Blend with a fork or immersion blender until completely smooth. You must eliminate all curds for a smooth texture.
  2. Add the cocoa powder, sweetener, melted oil or butter, vanilla extract, and baking powder to the mixture. Stir well until the batter is uniform.
  3. Stir in the chocolate chips, if using.
  4. Microwave on high power for 60 to 90 seconds. Cooking time varies based on microwave wattage; start checking at 60 seconds. The brownie should look set but still slightly moist in the center.
  5. Let the brownie cool in the mug for one minute before eating.

Notes

  • For a lower carb or keto microwave sweet, use a zero-calorie sweetener like monk fruit or stevia instead of maple syrup.
  • If you want a richer chocolate flavor, add an extra half teaspoon of cocoa powder.
  • This recipe works best as a single serve cottage cheese dessert for one. Do not attempt to double the recipe for a larger batch in the same mug.
