Make crustless, high-protein egg cups similar to Starbucks egg bites using cottage cheese and your choice of mix-ins.

Ingredients

  • 1 cup cottage cheese
  • 6 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup cooked, chopped mix-ins (e.g., spinach, bacon, ham)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin well.
  2. In a blender or food processor, combine the cottage cheese, eggs, salt, and pepper. Blend until completely smooth.
  3. Stir in the shredded cheese and your chosen cooked mix-ins by hand. Do not overmix.
  4. Pour the egg mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  5. Bake for 20 to 25 minutes, or until the centers are set and a toothpick inserted comes out clean.
  6. Let the egg cups cool in the tin for 5 minutes before removing them.
  7. For storage, let them cool completely, then place them in an airtight container in the refrigerator.

Notes

  • For a texture closer to sous-vide, blend the mixture longer until it is very light and airy.
  • You can use a silicone muffin liner for easier removal.
  • These egg cups freeze well for meal prep; reheat from frozen at 70% power in the microwave.
