  • 1/4 cup full-fat coconut milk (or dairy-free alternative)
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon keto-friendly sweetener (optional)
  • 1 tablespoon melted coconut oil or butter (for cooking)

Instructions

  1. In a medium bowl, whisk together the eggs, coconut milk, and vanilla extract until well combined.
  2. In a separate small bowl, mix the coconut flour, baking powder, salt, and optional sweetener.
  3. Gradually add the dry ingredients to the wet ingredients, whisking until just combined. Do not overmix; the batter will be thick. Let the batter rest for 5 minutes to allow the coconut flour to absorb the liquid.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease the surface with coconut oil or butter.
  5. Pour 2 to 3 tablespoons of batter onto the hot skillet for each pancake. You may need to gently spread the batter slightly, as it will not spread like traditional batter.
  6. Cook for 3 to 4 minutes on the first side, until bubbles form on the surface and the edges look set.
  7. Flip carefully and cook for another 2 to 3 minutes until golden brown and cooked through.
  8. Serve immediately with your favorite low-carb toppings.

Notes

  • For extra fluffiness, separate the egg yolks and whites. Whisk the yolks with the wet ingredients, then whip the whites to soft peaks and gently fold them into the batter at the end.
  • If the batter seems too thick after resting, add 1 teaspoon of water or extra coconut milk at a time until you reach a thick but pourable consistency.
  • These pancakes are excellent for meal prep; store leftovers in an airtight container in the refrigerator for up to 3 days.
