1/2 cup granulated sugar
2 tablespoons ground cinnamon
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup powdered sugar
2 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking pan.
Unroll the biscuit dough. Cut each biscuit into four equal pieces. You should have 16 small pieces total.
In a small bowl, combine the granulated sugar and ground cinnamon. This is your cinnamon sugar mixture.
Roll each small piece of dough in the melted butter until coated.
Next, roll the butter-coated dough pieces in the cinnamon sugar mixture, making sure they are fully covered.
Arrange the coated dough pieces in the prepared baking pan. They can be close together.
Bake for 12 to 15 minutes, or until the bites are golden brown and cooked through.
While the bites bake, prepare the glaze. Whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
Remove the pan from the oven. Immediately drizzle the glaze evenly over the warm cinnamon roll bites.
Let them cool slightly before serving. These are best served warm for the gooey texture.
Notes
For extra gooey centers, pour 1/4 cup of heavy cream into the bottom of the baking dish before placing the dough pieces inside.
If you want a copycat cinnamon roll bites flavor, add 1/4 teaspoon of cream cheese to the glaze mixture.
You can make these ahead by assembling the bites in the pan, covering them, and refrigerating for up to 4 hours. Add 2-3 minutes to the bake time if baking straight from the refrigerator.
