Ingredients
Scale
1 cup fresh cilantro, packed
1/2 cup Greek yogurt (or vegan mayonnaise for vegan option)
1/4 cup mayonnaise (omit for vegan option, increase yogurt to 3/4 cup)
2 cloves garlic
1/4 cup fresh lime juice (about 2 limes)
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 small jalapeño, seeds removed (optional, for spice)
2 tablespoons water (or more, for thinning)
Instructions
Place all ingredients—cilantro, Greek yogurt, mayonnaise (if using), garlic, lime juice, olive oil, salt, pepper, and jalapeño (if using)—into a food processor or high-speed blender.
Process the ingredients until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
If the sauce is too thick, add water one tablespoon at a time until you reach your desired consistency for drizzling or dipping.
Taste the sauce and adjust salt or lime juice as needed for balance.
Use immediately as a topping for fish tacos, a dressing for salads, or a dip for vegetables.
Notes
For a healthier, lower-calorie version, substitute all mayonnaise with plain Greek yogurt.
If you prefer a richer, tangier flavor, use sour cream instead of Greek yogurt.
This homemade cilantro dip keeps well in an airtight container in the refrigerator for up to four days.
To make this a quick marinade for chicken, thin the sauce slightly more with lime juice or water.
