2 cups long-grain white rice (Jasmine recommended)
2 tablespoons olive oil
1/2 cup fresh cilantro, finely chopped
1/4 cup fresh lime juice (about 2 limes)
1 teaspoon salt
1/2 teaspoon sugar
1/4 cup water
Instructions
Rinse the rice under cold water until the water runs clear. Drain well.
In a medium saucepan, combine the rinsed rice, olive oil, and 2 cups of water. Add the salt and sugar.
Bring the mixture to a boil over medium-high heat. Once boiling, stir once, cover the pot tightly, and reduce the heat to the lowest setting.
Simmer for 15 minutes without lifting the lid.
Remove the pot from the heat and let it stand, covered, for an additional 10 minutes. Do not lift the lid during this time.
Fluff the cooked rice gently with a fork.
Stir in the fresh lime juice and chopped cilantro until evenly distributed.
Serve immediately as a side dish for tacos or burrito bowls.
Notes
For a less sticky result, avoid stirring the rice after the initial boil and simmering phase.
Use fresh lime juice; bottled juice changes the flavor profile.
If you prefer a milder cilantro flavor, reduce the amount slightly.
