Bake these soft, chewy Christmas sprinkle sugar cookies. They are easy to make, require no chilling time, and are ready fast, making them perfect for holiday baking, cookie exchanges, or gifting.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup Christmas sprinkles (red, green, and white jimmies or nonpareils)
  • Extra sprinkles for rolling

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This step builds the soft texture.
  3. Beat in the egg and vanilla extract until just combined.
  4. In a separate medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Gently fold in the 3/4 cup of Christmas sprinkles using a spatula.
  7. Place the extra sprinkles on a shallow plate. Scoop dough by rounded tablespoons, roll into balls, and then gently roll each ball in the extra sprinkles to coat the outside.
  8. Place the dough balls about 2 inches apart on the prepared baking sheets. You do not need to flatten them.
  9. Bake for 9 to 11 minutes, or until the edges are set but the centers still look slightly soft. These cookies will spread slightly.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For the chewiest texture, slightly underbake the cookies; they firm up as they cool.
  • If you prefer a more buttery holiday cookie flavor, use high-quality unsalted butter.
  • These are excellent for kid friendly holiday baking projects since they require no dough chilling.
  • Store cooled cookies in an airtight container at room temperature for up to one week.
