Make this festive Christmas Jello Poke Cake for your holiday gatherings. This recipe uses simple ingredients to create a moist, red and green dessert topped with whipped topping.

  • 1 box white cake mix (plus ingredients listed on box for preparation)
  • 1 cup boiling water
  • 3 ounces strawberry (red) Jello powder
  • 3 ounces lime (green) Jello powder
  • 1 cup cold water, divided
  • 1 container (8 ounces) frozen whipped topping, thawed
  • 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • Christmas sprinkles for garnish

Instructions

  1. Prepare the white cake according to the box directions using a 9×13 inch baking pan. Bake and let it cool on a wire rack for 15 minutes.
  2. While the cake is cooling, prepare the Jello. In a small bowl, dissolve the strawberry Jello powder in 1/2 cup of boiling water. Stir for 2 minutes until fully dissolved. Add 1/4 cup of cold water and stir. Set aside.
  3. Repeat step 2 with the lime Jello powder, using the remaining 1/2 cup boiling water and 1/4 cup cold water. Set aside.
  4. Once the cake has cooled for 15 minutes, use the handle of a wooden spoon or a large fork to poke holes all over the top of the cake, spacing them about 1 inch apart. Poke deep holes without going all the way through the bottom.
  5. Carefully pour the liquid red Jello mixture evenly over the entire surface of the cake, allowing it to seep into the holes. Let the cake sit for 10 minutes.
  6. Pour the liquid green Jello mixture evenly over the red Jello layer, allowing it to soak in.
  7. Cover the cake loosely with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the Jello is completely set.
  8. When ready to serve, prepare the topping. In a medium bowl, beat the heavy cream and powdered sugar with an electric mixer until stiff peaks form. Gently fold in the thawed whipped topping.
  9. Spread the whipped topping evenly over the set Jello cake.
  10. Decorate the top with Christmas sprinkles before slicing and serving this easy holiday cake.

Notes

  • For a richer flavor, you can substitute the water used to dissolve the Jello with clear soda like lemon-lime soda.
  • Make this a make ahead Christmas dessert by preparing it completely the day before your event.
