Ingredients
Scale
1 cup unsalted butter, softened
1 cup packed light brown sugar
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups M&M’s Holiday Chocolate Candies
1 cup semi-sweet chocolate chips
1/2 cup vanilla frosting (optional, for topping)
Instructions
Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This step builds the chewy texture.
Beat in the eggs one at a time, then mix in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Gently fold in the M&M’s and chocolate chips.
Press the cookie dough evenly into the prepared baking pan.
Bake for 22 to 25 minutes, or until the edges are set and the center looks mostly done but still slightly soft. Overbaking makes them dry.
Let the bars cool completely in the pan on a wire rack.
If using, spread the vanilla frosting evenly over the cooled bars.
Once frosted, use the parchment overhang to lift the bars from the pan. Cut into squares.
Notes
For extra flavor, brown the butter slightly before creaming it with the sugars. Let it cool slightly before proceeding.
You can make these cookie bars ahead of time; store them tightly covered at room temperature for up to three days.
If you want a thicker bar, use a 9×9 inch pan instead, but adjust the baking time, checking around 30-35 minutes.
